This cake was ordered by my colleague for his birthday...surprises for his family.....

Mama Carries Cookies

MAMA CARRIES COOKIES
Source : SAJI Magazine, October 2006

Ingredients :

250 g butter
350 g flour
100 g icing sugar
150 g corn flour
1 teaspoon vanilla essence

Topping :

125 g icing sugar
1/2 egg white
1/2 tablespoon corn flour
Chocolate emulco

Method :

1. Cream butter and icing sugar. Add in vanilla essence and continue stirring.
2. Add in corn flour and enough flour till a soft dough is formed.
3. Roll to 1/2 cm thick and cut using cookie cutter of your choice. Arrange the cookies on a tray lined with greaseproof paper.
4. Spread the topping. For better result, use your finger to do the job.
5. Dip a toothpick into chocolate emulco and sketch on top of the topping.
6. Bake in a pre-heated oven at 150 C for 17 - 20 minutes.
7. Topping : Mix all ingredients to form a smooth paste.

Muffin prune......

MUFFIN PRUNE
Adapted from : "Classic Blueberry Muffins" of Cupcakes & Muffins R&R Publications

Bahan-bahan:
2 1/2 cawan tepung naik sendiri
1 tsp baking powder
1/3 cawan gula castor
Secubit garam
2 biji telur, dipukul seketika
1 cawan susu segar
60g butter, dicairkan
130g pitted prunes, dihiris kasar

Cara-cara :
1. Panaskan oven pada suhu 200 darj cel. Sediakan paperliners dalam muffin tray.
2. Ayak tepung naik sendiri, bakingpowder dan secubit garam ke dalam sebuah mangkuk.
3. Campurkan gula dan prune ke adunan tepung tadi. Gunakan whisker utk menggaulnya sebentar sahaja.
4. Di dalam bekas yang lain, campurkan telur, susu dan butter cair. Kacau seketika.
5. Tuang bahan basah ke bahan kering dan gaul sekadar kedua-dua bahan bercampur.
6. Sudukan adunan ke dalam paperliners dan bakar selama 20min - 30min.
